What Is Aloo Puri?

Aloo puri literally translates to potato poori. Poori is a popular Indian breakfast and often served with varieties of side dish.

One of the most favorite combination to eat with poori for many people is potatoes. Be it spicy dum aloo or south indian poori maslaa or this rich potato curry, aloo poori is the most loved breakfast combination for many Indians.

But this potato poori recipe shared here a bit different and very delicious. In this method you mash the boiled potatoes, season it and mix with wheat flour to make poori.

Such flavored puris are very popular across south India and we make palak puri, beetroot poori, paneer poori to name a few.

Potato poori turns out very delicious and flavorful given to the addition of spices and herbs. Also you can serve this aloo puri with plain curd as it is very flavorful on its own. No need for an elaborate curry.

Potato Poori Ingredients

To make aloo puri we need the following ingredients. Most of these ingredients are your pantry staple and you can always swap the ingredients and use whatever is handy

Whole wheat flour– The wheat flour we use for making roti, phulka and refular poori. Use good quality wheat flourwith some barn to retain the nutrients.

Rava or Semolina– We usually add a small amount of rava or semolina to the dough while making pooris. Semolina helps in making the puri crispy and also stays puffed up for sometime.

Potatoes– Boiled and mashed potatoes.

Spices and Seasonings- Here I have used regular spice powders like garam masala and cumin powder. Yo can also use amchur, pav bhaji masala powder.

How To Make Aloo Puri?

To make aloo puri boil, peel and mash the potatoes well. Add the spice powders, crushed ginger-green chili and salt. To this gradually add wheat flour and semolina. Start kneading the dough. Potatoes will contain moisture, so add water only if needed in small quantities.

Pinch small balls from the dough and roll into small discs. Heatoil for ddeep frying. Deep fry until golden and crispy. Serve with curd or pickle.

You don’t have make an elaborate side dish for potato poori. Just some spiced curd or raita or pickle will do. I just served it with some sauteed cauliflower and curd.

Top Tips To Make Aloo Puri

Mash the potatoes well before adding the dough.

Add water only in small amounts if required.

I use cold pressed ground nut oil for all deep frying for its flavor and nutrition.

Serve hot or you can call cool down and pack aloo poori in tiffin for toddlers and kids.

Ingredients

  • 2 big potatoes boiled and mashed
  • 1 cup whole wheat flour
  • 2 teaspoons fine rava
  • 1/2 teaspoon minced ginger
  • 2 green chilies finely chopped
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon asafoetida
  • 1/4 teaspoon turmeric powder
  • 2 tablespoons chopped cilantro leaves
  • Salt
  • Oil for deep frying

Instructions

  • Boil, peel and mash the potatoes. Mix with the rest of ingredients and knead well. Add very less water, only if needed.

Notes

1. Adding rava makes poori crispy and fluffy.
