This delicious keto broccoli and Stilton soup will warm you right up on a cold day. With a combination of calcium, healthy fats and proteins, this soup will keep you full and satisfied.
This has been one of my favourite soups for years. I'm a big fan of strong cheese and the taste of a creamy Stilton cheese goes well with broccoli.
This is a richer version than a keto broccoli cheddar soup due to the strong creamy cheese but it's packed full of flavour. Serve the soup with our coconut flour bread rolls for a filling dish.

Carbs in Stilton
Not all cheeses are have zero carbohydrates but Stilton cheese does! 0g net carbs, 10g fat and 7g protein are the nutritional information for this strong and creamy cheese.
There are two types of stilton, white and blue. The blue is more commonly sold in supermarkets and this is what we have used.
How many carbs in broccoli
Broccoli is almost the green cousin of cauliflower as it's a great low carb food that is very versatile. With just 4g net carbohydrates per 100g serving. Low in calories, high in fiber, vitamin C and K and iron, it's a healthy vegetable.
How to make keto broccoli and stilton soup
This is a simple soup to make with just a few ingredients. Broccoli, Stilton, onion, stock and cream. That's it! Nothing complicated for this low carb bowl of comfort soup.
We blend the soup until it's smooth but you could leave it chunky or semi chunky.
Storing Leftovers
Keep any leftovers in the refrigerator in a sealable container. It will last up to 4 days and can be gently reheated on the stove in a saucepan.
Can I freeze homemade broccoli and Stilton soup?
This low carb broccoli and Stilton soup freezes well. Ensure that the soup is completely cooled then either pour the soup into a zip lock bag or an air tight container. The soup will freeze for up to 3 months.
To defrost, place the frozen soup in the refrigerator. Once completely defrosted, reheat on a medium heat.
Recipe Tips
The Stilton cheese can be replace with another blue cheese such as Danish blue, Gorgonzola or Roquefort.
Try Creme Fraiche for the cream instead of heavy cream.

Ingredients
- 1.32 lb broccoli chopped into florets
- 2 tablespoons olive oil
- 1 small onion finely chopped
- 10.58 oz Stilton cheese
- 2 cups vegetable stock or chicken stock
- ½ cup cream
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
Heat the oil in a medium pan on a medium heat and saute the onion for 5 minutes
Add the broccoli florets and cook for a further 5 minutes
Pour in the stock and simmer for 15 minutes
Crumble in the Stilton cheese and cook for further 5 minutes
Use a hand blender to blend the soup until smooth.
Return the soup to the saucepan and stir in the cream. Season with salt and pepper.

Makes 6 servings
